Aissehhh....lama sungguh saya menyepi! Tiap malam berangan nak update blog but at the end saya lebih memilih tilam & bantal rather than turn on the lappy.
Bila dah lama tak update, mcm biasa saya akan buat entry 'warm-up' tepek gambar my tested recipe. Ada manfaatnya jugak share resipi kat blog sebab saya noticed walaupun blog tak update tapi ada jugak yg tersesat masuk untuk cari resepi. But, good to remind that resepi yg saya cuba cuma yg biasa2 aje pasai saya pun baru beginner level :-)
Banana almond muffins yg dah lamaaaaa saya buat....
Buat muffin gaya anak sepuluh. Kalau anak 10 pun tak tahu berapa hari baru boleh abis :-)
Saya memang buat banyak tapi bukan utk makan sendiri. Buat untuk kawan sempena majlis 'coffee & tea' sebaik saja lepas viva PhD thesis nya. Asalnya diminta buatkan 2 bijik kek, tapi disebabkan masalah 'delivery' saya cuma boleh tolong buatkan muffin aje.
Walaupun tuan punya majlis cakap nak order, tapi saya skit pun tak berniat nak ambik tempahan. Sekadar tolong kawan2, tapi at the end masa pulangkan bakul muffin terselit jugak sejumlah wang. Saya cuma perasan bila dah sampai rumah. Malu pulak rasanya bila dibayar dgn sejumlah wang yg tak berpatutan dengan apa yg saya buat. Nak pulangkan balik duit pun dah sempat boleh sebab sebaik abis viva, the next day nya dia terus terbang balik ke Malaysia.
Muffins antara yg senang nak buat. Tak ambik masa yg lama nak sediakan dan yg penting tak perlu selongkar almari utk keluarkan mixer (salah satu benda yg saya tak suka buat hiihii) . Guna hand whisk aje :-)
Recipe adapted from joy of baking tapi rasanya muffins saya lagi comey dari muffins mak cik Stephanie hiihii...
* versi malas copy & paste aje
1 cup (115g) walnut or pecan (saya ganti dgn almond nibs)
1 3/4 cups (230g) tepung gandum
3/4 cup (150g) gula
1 ts baking powder
1/4 ts baking soda
1/4 ts garam
1 ts serbuk kayu manis
2 large eggs (slightly beaten)
1/2 cup (113g) unsalted butter (melted & cooled)
3 biji pisang masak (dilenyek dlm 1- 1 1/2 cup)
1 ts esen vanilla
Banana Muffins:
- Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle of the oven. Line a 12 - 1/2 cup muffin pan with paper liners or butter or spray with a non stick spray.
- Place the nuts on a baking sheet and bake for about 8 to 10 minutes or until lightly toasted. Let cool and then chop coarsely.
- In a large bowl combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nuts.
- In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. With a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky.
- (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery bread.)
- Spoon the batter into the prepared muffin tins. Bake about 20 -25 minutesor until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan.
- Serve warm or at room temperature.
Makes 12 regular sized muffins.
Saya buat 4 adunan, dapat dalam 50 bijik muffins.
* since saya guna almond nibs & tabur almond flakes atas adunan yg yg dah di scope dlm muffin cup sebelum dibakar, saya pun pandai2 la tukar nama jadik Banana-Almond muffins hiihii....

ReplyDeleteCuba lah mana tahu kot2 kena dgn selera. Saya suka sbb ada rasa Kayu manis dan yg penting tak manis sgt, mkn ms panas sedap sbb terasa almond flakes yg still crunchy tp kalau nak moist lps sehari baru jadik lebih moist.
